Durango’s first “Pan Asian Bistro & Sushi Bar”, East by Southwest applies the many outstandingly flavorful elements of the Orient into dishes that are classically lean, healthy, and high in protein, perfectly suited for the active Durango lifestyle. EXSW has distinguished itself as a creative culinary force by taking the concept of “fusion” to the next level, artfully incorporating distinctively spicy and savory herbs and chilies native to the Southwestern United States.
For those who like their meals cooked, have no fear, there’s something here for everyone! Diners can choose from a variety of grilled favorites, such as the Black Angus Strip Steak, with green peppercorn Kizami wasabi sauce, asparagus spears & garlic Yukon gold mashers; or the Massaman Lamb Chops, with Potato Gratin, roasted eggplant, & Massaman curry sauce. Chef Sergio, a classically trained graduate of the Culinary Institute of America, mastered the art of sushi at the California Sushi Academy in Venice, California. He explains, “When I put the menu together, I didn’t want to do just sushi. My focus here is to have something for everyone, so that people can come and dine here with friends who don’t like sushi and still get a nice experience.”
Our meats are of the highest quality, featuring succulent American “Kobe” or “Wagyu” beef, and free range Colorado Black Angus. We also serve tasty poultry dishes using certified organic birds.
